Pork Roast - How to Cook it Moist and Tender

Would you like to cook a pork roast that will make your mother-in-law turn green with envy? Follow these guidelines and you can put dried out and tasteless pork roast behind you forever!

Cooking pork roast is not rocket science. All it takes is heat and time and you'll wind up with cooked pork. However if you want to cook a pork roast that is moist, tender and delicious there are some guidelines to follow.

Cookware Sets

The first step in the perfect pork roast formula is selecting the type of roast. Next on the agenda is determining the best cooking method for the roast you've selected.

This decision making process also works in reverse. If you know the cooking method you want to use you then decide on the cut of pork.

Probably the most important step in cooking today's pork is brining! This takes a little time planning to allow the roast to absorb the brine but it is well worth the effort.

Selecting the Roast

I'll have to admit that if I'm just hungry for pork roast my decision for the type of roast is whatever is on sale. Then I'll decide how to cook it based on what is best for that type.

If you don't want to use the "whatever is on sale method" then a little knowledge of pork roast is in order.

Most all pork roasts come from the shoulder and loin wholesale cuts. There are fresh ham roasts (the hind leg) but you will rarely see them in groceries. Also pork sirloin roasts are from the hind part of the loin and they fit the shoulder roast category.

Shoulder Pork Roasts

Roasts from the shoulder contain several different muscles along with connective tissue and a good amount of fat.

These roasts benefit from long slow roasting times that allow the connective tissue to break down. They are extremely flavorful due to the amount of fat.

Shoulder roast cuts include the whole shoulder, which is good for a crowd, Boston butt, the top of the shoulder and Picnic roasts from the bottom.

These roasts all might have different names in your grocery according to the cut.

Roasts from the shoulder are the cut of choice for recipes such as pulled pork.

Pork Loin Roasts

Roasts from the pork loin are the best roasts from the pig. They are single muscle roasts without much fat. These muscles are from the center of the back of the pig and get very little usage, which makes them tender.

Basically there are two main roasts from the loin. By far the most tender is the pork tenderloin. The mild pork flavor of the tenderloin lends itself to marinades to impart flavoring.

The pork loin roast has a slightly stronger pork flavor than the tenderloin and is extremely lean. It compares in leanness to chicken breast.

Brining Pork Roasts

Most all meat products will benefit from brining.

Brine is simply a solution of non-iodized salt and water. The meat has a less concentration of salt and water than the solution so Mother Nature takes over to equalize the two.

Basic brine is 1 cup of non-iodized salt to one gallon of water. But it doesn't stop there. All sorts of flavorings can be added to the brine and will be imparted to the roast.

A brined pork roast increases in weight because of the brining. The weight is all water. As the roast is cooked most of the water is cooked out but some remains resulting in a moist and tender roast.

The shoulder and sirloin roast will benefit from brining but they are just fine without it due to the fat content. For a pork loin roast, however, I consider brining essential because of its low fat content.

Cooking Pork Roast

Pork roasts are a little more forgiving when selecting a cooking method than their beef equivalent.

There are two basic methods for cooking meats. These two are the "moist heat" method and the "dry heat" method.

Moist heat simply means that there is a liquid included along with the roast in the cooking vessel.

The moist heat method is for cuts that are from the less tender sections of the animal. The moist heat assists in breaking down the fibers and tissue of the meat to yield a tenderer product.

Roasting in the oven, the crock-pot or even an electric skillet are ideal methods of applying heat to the roast during moist heat cooking. Either method should include a tight fitting heavy lid.

Pot roasts and braised roasts are examples of the moist heat cooking method.

The dry heat cooking method is the opposite of the moist heat method. No liquid is introduced during the cooking process.

Dry heat cooking should include a searing of some type for a crispy and flavorful exterior. You can sear the roast in a skillet or in an extremely hot oven for a short period of time.

Dry heat can be applied in the oven, on the grill or my favorite the smoker.

Pork Roast Cooking Times

Cooking time is critical for a moist and tender pork roast.

There are many variables to pork roast cooking times. Some of those variables include the type of roast, the size and thickness of the roast and the cooking temperature.

There are some rules of thumb for cooking time for the different roasts but at best they are only a guess.

A two to five pound pork loin roast cooked at 350 degrees f. will require roughly 20 to 30 minutes per pound.

Pork tenderloin in the one to two pound category will require the same 20 to 30 minutes per pound but at 425 degrees F. instead of 350 degrees.

A two to five pound Boston butt roast will require approximately 45 minutes per pound at 350 degrees F. The extra time is to allow the connective tissue to break down and the fat to melt and mingle with the roast.

The only sure way to know when your roast is done is to use a meat thermometer.

If you are roasting in the oven an oven thermometer is also recommended. Oven thermostats are notoriously inaccurate.

Like I said cooking pork roast is not rocket science. Following these guidelines, however, will yield a pork roast so moist and tender it will surely impress your guests and will definitely make your mother-in-law turn green with envy.

There are probably as many pork roast recipes as there are cooks. Choosing a recipe for your family will depend on their likes and dislikes.

By brining your roast with herbs and spices you can create your own recipe to include your favorite flavors.

Using Drama In The EFL Classroom - Essential Props And Materials To Have On Hand

Motivating our English as a foreign language learners is a constant concern among most EFL teachers. Learners may also be limited English proficiency (LEP) or reluctant due to other intrinsic or extrinsic motivational factors. You might be in need of new techniques for teaching English grammar, verbs or structure in context. Then too, EFL teachers may simply be seeking additional ways to incorporate dynamics into their English language teaching. Whatever the case may be, the addition of drama and dramatic elements is often an enthusiastically welcomed one. In preparation, here are some suggested useful props and materials that will aid in the inclusion of dramas in the EFL class room.

Key Props You Should Have on Hand

Furniture:

Some useful items for simulating a restaurant, café, store or small shop setting include a small table, two to four chairs, a tablecloth, place settings some throw pillows, a throw rug, and an assortment of tableware. For tableware consider plastic tumblers, cups, plates, flatware, cookware, napkins and containers for condiments.

Character Clothing:

To help learners get into character for dramatizations, dialogues and role plays a selection of jackets, smocks, aprons, hats, caps (baseball cap, uniform cap, etc.), masks-to have "Batman" do passive voice, and wigs (in a variety of colors) are easily acquired. Consider additional items such as neckties, boots, scarf, handkerchiefs, bandanas and gloves too.

Noise-Makers:

EFL learners of all ages love to put these into play during dramatic scenes of many different types. All manner of bells, chimes, whistles flutes, rattles and whatever other realia you might be able to come up with will add to your variety of imaginative props.

Toys and Playthings:

These toys and playthings I rather like myself because they can be utilized in a vast array of English as a foreign language class activities, in addition to drama and dialogues usage. Try an assortment of items such as: balloons, dolls, stuffed animals, marbles, jacks, decks of playing cards, an inflatable ball (like a beach ball), a smaller rubber ball, baseball or soccer ball, a pair of dice, some popular board games, a set of checkers, some dominoes, and a chess set.

Settings Accessories:

For simulating settings try props like ashtrays, timers, an hourglass, bags in assorted sizes, a very dull razor, shave cream, an egg timer, spray bottles, and a free-standing clock. Likely you'll already have assorted books, paper, pens, rulers, scissors and other stationery items on hand in the class room to fill out this assortment of props.

Lights, Camera, Action!

Certainly, you won't need to have all of these items on hand. Whatever is available and suits the conditions under which you teach will drive which of these things you'll ultimately work with. Your learners will undoubtedly have many other suggestions too. Just remember to allow them free or "unguided" practice with the English language in context, performing dialogues, dramas, skits and role plays, have fun with it and above all enjoy the results.

The Top Three Healthy Non Toxic Cookware Sets

With all of the bad publicity that Teflon and aluminum cookware has received, many of us are searching for healthy non toxic cookware. It doesn't make any sense to purchase healthy whole foods and then cook them in toxic pots and pans.

Cookware Sets

Although stainless steel cookware has been considered a safe alternative, it does have one drawback. Stainless steel cookware is made with a combination of stainless steel, chromium and nickel. None of these are harmful in small doses, but many people are allergic to nickel. If you are allergic to nickel, you should refrain from using stainless steel cookware.

Another concern that many people are not aware of is that some glazes used on crock pots have small amount of lead. The recommendation is to use terra cotta crock pots without the lead glaze.

Calphalon is the leading manufacturer but many other companies are now producing cookware sets made with the hard anodized aluminum. Calphalon cookware cooks evenly on lower heat and is stick-resistant. They have stainless steel handles which will stay cool during stovetop cooking. The pans and lids can be used in the oven and broiler.

Cuisinart has introduced a line of non-stick cookware called Cuisinart Green Gourmet Hard Anodized Cookware. They work just like the Teflon cookware, except they don't emit any of the toxic fumes that Teflon pans do. Just like the Teflon pans, they allow you to cook with less oil and they are also energy efficient and eco-friendly. This Green Gourmet cookware set is oven and broiler safe.

KitchenAid has their own set of non-stick anodized aluminum cookware called KitchenAid Gourmet Essentials. This cookware set features stainless steel handles coated with silicone grips. The lids are break resistant glass which makes it nice to see what you are cooking. These pots and pans are oven safe up to 400 degrees.

All three of these companies cookware sets are highly recommended healthy non toxic sets. I use the Kitchen Aid Gourmet Essentials cookware in my kitchen. It is the best value out of the three.

Little ones love chocolate and making something tasty that ties in with Halloween is sure enough to get your celebration unique. Try these simple chocolate bites.

Wormy Chocolate Cupcakes

You'll need:

½ cup of water 1 cup granola oil 4 eggs 1 box ( 18 oz.) cake mix with pudding 1 cup of ready to spread chocolate frosting 24 gummy worms

What to Do:

Set the oven 350 degrees and preheat. Prepare muffin pan by placing paper cupcake liners into the muffin cups. Spray with a non-stick cooking spray evenly. In a mixing bowl, whisk together water and oil then add the eggs and continue whisking until blended. Gradually add the cake mix powder and stir to combine well. Fill the paper lines 2/3 full of the batter and bake for 20 minutes, or until a toothpick inserted in the cupcake comes out clean.

When done, take out cupcakes from muffin pan and transfer to a wire rack until slightly cool. Make a coin-size hole in the center of each cupcake. Place your prepared frosting inside a parchment paper or a baggie and squeeze into the cupcake holes. Press a gummy worm into the frosting of each cupcake.

Creepy Chocolate Ice-Cream Cups

You'll need:

10 graham cracker tart shells 10 scoops of vanilla ice cream 20 chocolate cream filled cookies, crumbled 20 red M&M candy pieces 20 pieces of black shoestring licorice, cut into fourths

How to Make It:

Arrange graham cracker shells on a baking pan. Fill each shell with 1 scoop of ice cream then top with the crumbled cookies coating heavily. Freeze for 30 minutes to one hour, or until the ice cream has hardened. Press 2 M&M's into the front to look like red eyes, and press 8 strips of licorice into each ice cream scoop to form the spider's legs. Return to the freezer until serving time.

Chocolate Ghost Bites

You'll need:

2 pkg. (12 squares) white Chocolate 1/4 cup whipping cream 1 tablespoon of butter, softened Decorating gel

How to Make It:

Melt the chocolate squares, cream and butter in the microwave for 2 minutes, stirring after 1 minute. When the chocolate is completely melted, cover. Freeze until firm, about 1 hour or more. When chocolate is cool enough to handle, scoop with a spoon and roll chocolate mixture into bite-size spooky balls. Place the balls into a waxed paper and freeze for 20 minutes. Use a decorating gel to draw eyes on the frozen spooky balls to resemble ghosts. Refrigerate for 30 minutes to 1 hour. This will make your chocolate spookies firm upon serving.

You will be amused how kids will respond to the ideas. They will be thrilled at first to touch the scary chocolate bites yet at the end they will eat them all. You may wrap the squirmy chocolate cupcakes in decorative plastic wrap to give as giveaway. These ideas also go for adults!

How to Cook Tri Tip in Your Oven Like an Expert

If you've got any of my other cooking articles here, you know I'm somewhat of a tri tip expert. I love it. Normally, I do mine on the grill, but there are times (especially when I'm busy) where I'll cook it in the oven. And you know what? It still tastes great. Here's how I do it.

First of all, you need to rub / marinade your meat however you like it. There's no perfect way. I've done tri tips all kinds of ways-it's the cut of meat I use when I experiment. However, you're going to want some wet works for the cooking. This could be a mixture of olive oil and other ingredients or your preferred marinade.

If your meat is in the refrigerator, take it out for about 5-10 minutes before cooking.

Heat up your oven to about 425 degrees F. Make note that cooking times and temperatures can vary from oven to oven.

Next, place your tri tip on a baking pan fat side down. Drench a little of your preferred wet works over it and slide it in the middle of your oven. Set your timer for about 45 minutes. Your cooking time might be about 1 hour, but from about the 45 minute mark, you want to pay real close attention to the meat.

Here's the key. Every 8-10 minutes, add some more marinade over the top of your tri tip. You may end up doing this 6-7 times depending on final cooking time. Remember to take it out before it's actually done, because it will continue to cook for up to 10 minutes afterward. And I like to wrap mine in foil for 5 minutes before cutting it.

Lastly, if your cut of meat has a fair amount of fat on the fat side, start it in the oven with that side up for about 8 minutes and then flip it for the rest of the duration. If you've done everything right, your tri tip from your oven will be very tasty.

Creepy food is always part of a Halloween feast and no matter how simple they come, they add color to the occasion. Here are some ways to transform something ordinary to something extraordinary, using tuna.

Make two cups of tuna and mayo mixture the way you usually do it, but add more mayo or cream to make it appear creamy. Set aside. Prepare a cup of "clear or colorless" gelatin according to the package instructions then stir the cooked gelatin on the tuna and mayo mixture. Pour mixture into a brain mold. You can buy one at bakery items or seasonal stores. Chill for 1 hour.

Unmold by turning the mold upside down then gently pop out the brain onto a platter with a bed of lettuce. You can use your hidden sculpting skills to make the tuna even look like a brain.

Tuna Witch Fingers

Slice tuna fillets to form finger-shaped pieces. Fry on your usual way. Paint the pointed end or "nail portion" by using some red food coloring and brush on with a small kitchen brush. If you have a red decorator gel, squeeze gel onto the tip of the tuna slices to form nails.

Halloween Tuna Eyeballs

Combine ground tuna, flour, cheese, some butter, pepper and salt. When the tuna mixture is enough to hold together, shape into eyeball-sized balls. Flatten each ball just a little and press pimiento-stuffed green olive in the center. Arrange in a way the "eye" (pimento) is facing outward. Mold tuna meat around the olive, and bake for 10 minutes.

Tuna Monstrous Sandwiches

In this recipe, use white tuna fish that is packed in water. Cut tuna into small pieces then mix with celery, mayonnaise, lemon juice and seasonings. Cut the bread slices in the shape of ghosts. Spread tuna mixture onto the bread to form sandwiches. Use raisins to make the eyes and mouth.

Celebrating Halloween doesn't really need to be expensive. Creepy, maybe, but these Halloween recipes are only designed to put smiles and fun around. I hope the Halloween tuna ideas will help to get you started in creating memorable Halloween traditions. You may find it inflexible to mingle tuna with your other usual Halloween dishes, but the whole sense of chaotic flavors running on your palate could add up to the whole "scary" scheme. Is Celebrity Cookware Worth Buying?

If there's one question that I get asked almost more than any other, it's a question about celebrity cookware. People want to know if this stuff is worth purchasing and it's very hard to answer this question for a number of reasons.

First off, what exactly am I talking about by celebrity cookware? Well, basically I'm talking about any kind of cookware that is produced by a television personality or television chef of any kind. You know the people that I'm talking about, all those cooking shows on television that we all love to watch that are produced by people like:

- Jamie Oliver
- Emeril

I'm a big fan of every one of those celebrities...I watch their tv shows whenever I can. Over time, however, you sort of get to notice a pattern that they all fall into. I call this the marketing trap. Basically they start out with the television show, and it becomes wildly popular and their names become an instantly recognizable trademark.

Next, they attempt to cash in on their new fame, usually by creating a cookbook or something small that's easy to produce and easy to manufacture. Of course, the cookbook is usually an instant success which causes them to release another cookbook which is also usually a success...

And then they continue to grow their marketing from there, usually by introducing their own line of celebrity cookware with their name on it. This stuff usually looks absolutely amazing, and that's the trick.

But the fact of the matter remains that these people don't have any experience manufacturing cookware, or anything else that's as complicated as these types of things. Sure a cookbook is easy, but a 12 piece cooking set? They usually team up with a company of some sort who are responsible for actually manufacturing the stuff.

The problem is, in order for the margins to work out they really have to produce questionable products that are as cheap to produce as possible because otherwise the limited production runs won't pay for themselves, no matter how much free advertising they get on the celebrities television show.

Subsequently, this stuff is usually much cheaper than high-quality dishware.

The bottom line is; this stuff will usually hold up pretty well for about a year, or maybe two years at the most and then it starts to warp and breakdown in various different ways, almost always, no matter who the celebrity chef is.

Take my advice and steer clear of this stuff if at all possible. Spend a few extra dollars for some high-quality stuff that will last for years to come.
